Memory Tape

Strong Dark Ale - ABV 9%

Greatly inspired by the Strong Dark Ales of Belgium - Brewed with a variety of Belgian malt, boiled for several hours with European hops and open fermented with WLP530 at ambient temperature. Conditioned in stainless for several weeks and then bottled on 12/18/2023 to re-ferment, condition, mature, and test our patience.

Tasting notes - coffee bark, milk chocolate fudge, rugbrød, black treacle

Time Stacking

Barleywine - ABV 11%

‘Tis life… - Brewed last Spring, primarily with Maris Otter and just a touch of British crystal malt. Boiled for five hours to a gravity of 28 plato and hopped with a small amount of Kazbek (lending itself to the first tasting note) in the kettle. Fermented with WLP001, cold conditioned at 0°C for twelve weeks, and then packed on 08/15/2024.
